                                                           RED SOUP

Not too long ago my daughter mentioned to me her memories about Red Soup.  It was a staple in our large family.  I would save every scrap of vegetables from meals in a container in the freezer. Those vegetables would be combined with V-8 juice and 1 lb. of hamburger.  I would also chop and add an onion or a bell pepper if I had it on hand.  It was a simple soup and a simple solution for a very busy working mother.  

Since then my soup making has evolved with the addition of stocks, more adventuresome spices and on occasion fresh homemade pasta. It still is an important part of our diet. Today you can look in my freezer and find that container of vegetables collected over a week or two from the evening meal.  You will also find freezer bags with left over bones and meats.  It is a way of life, saving every little scrap of everything.  

It is my hope that as I share my hints with you, my blog readers, that you feel free to do the same.  But most of all it is my hope that you will join with me in this journey to the soup asylum.
